The Bacon Pancake Cupcake

Last week my friend, Tata, called me. You remember Tata, right? She discovered a bakery in town with the most amazing new flavor of cupcakes: the Bacon Pancake Cupcake.

*insert the sounds of angels singing

That's right. I said the Bacon Pancake Cupcake. You had me at bacon. Only part of the pig I enjoy. Obviously, a small road trip to the other side of town was now in order.

Here is the Bacon Pancake in it's natural habitat in the bakery's display case. Notice the heavenly light shining down upon the cupcakes. Some people might argue that it's the light from the display case, but those people are wrong. 




Come along with me while I break down this culinary masterpiece. You won't be disappointed.

Ahh … the cupcake. The cupcake itself tastes like a pancake. Not like cake, but a pancake. It's perfect.

The frosting has a delightfully subtle maple flavor to it. It's perfect.

The bacon artfully arranged on top is of a thick sliced maple flavored variety. The saltiness of the bacon cuts the sweetness of the cupcake flawlessly. Generally I'm not a fan of the thick cut maple flavored bacon, but on this cupcake … puh-leeze. It's perfect.

And the slight drizzle of real maple syrup on top? Fuhgeddaboudit. It's perfect.



I've eaten three of these beauties this week. And I convinced my Aunt to FedEx a dozen from Indiana to Iowa so my bacon lovin' cousin could marvel at the simple genius that is a Bacon Pancake cupcake.

Simply put: they're perfect.
